Cupcake Impossible.

Life lesson #132. Betty does it better.

A friend and I (vainly) attempted to make cupcakes from scratch on Sunday. Often cooking and baking from scratch as well as growing up watching my mother constantly produce meals out of a variety of ingredients, I thought cupcakes would be a walk in the park. Wrong.

Not all of our attempts at a moist mini cake failed. But I did learn the valuable lesson that Betty Crocker knows what she is doing – and if it ain’t broke, don’t fix it.

(Mad props to Stef of Cupcake Project. We made her Peaches and Cream cupcake – which was the only ‘from scratch’ cupcake we were able to make without fail.)

Next up was the chocolate cupcake. After learning that chocolate cupcakes from scratch were harder than anticipated, we used the box mix.

Lastly we attempted a plain vanilla cupcake, again from scratch. The result: dry, dry, dry.

We planned to pair the vanilla cupcake with this delicious strawberry whipped cream from the Cupcake Project. The whipped cream was just too good to not put on a cupcake. So we iced them anyway, really with the intention to lick off all the icing and toss the cupcake.

So – I don’t make a stellar cupcake, but I do make a tasty icing. I think i’ll stick to Betty’s mix for a while and experiement with the toppings.

    Jess- I appreciate your candor, and I’m glad I’m not the only one who experienced this! I used to think I was fairly good at whipping up baked goods, but from-scratch cupcakes were a real hit to the self-esteem. (But I still can’t bring myself to admit that Betty does it better, it’s going to take several more failed attempts to confess) Your icing job looks great, by the way!

    Glad you liked the peaches and cream cupcakes. Don’t give up on from-scratch baking so quickly. Whenever I figure out the ultimate vanilla cupcake recipe, you’ll have to give it a try! Great seeing you the other day! ..Stef
