There is no getting past it. Christmas is coming, and quick!

If you’re like most people, weeknights are spent cramming in your holiday shopping to avoid those weekend crowds. The last thing you want to do after a long day of work and a few hours of shopping is come home and cook an extravagant meal.

All you’ll need for this recipe are a few, simple ingredients, a trip to your spice rack, and your oven. And let me tell you, this one is for sure to bring some spice to your weeknight rotation. Literally.

You will need:
1 lb. boneless, skinless chicken breast – cut into strips
2 tbsp. vegetable oil
2 tsp. chili powder
2 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/4 tsp. salt
1 (15 oz.) can of diced tomatoes with green chilies
1 medium onion, sliced
1 large bell pepper, seeded and sliced
12 flour tortillas
shredded cheese, sour cream, guacamole as toppings (optional)

Preheat oven to 400 degrees. Placed chicken strips into a 13×9 baking dish. In a small bowl, combine oil, chili powder, cumin, garlic powder, dried oregano, and salt. Drizzle spice mixture over chicken, and stir to coat. Next, add the tomatoes with chilies, peppers, and onion to dish. Stir to combine. Bake uncovered for 20-25 minutes, or until chicken is cooked through and the vegetables are tender. Serve on tortillas with desired toppings.
